Chandler's C and K are putting together a recipe book. So, here is my entry! These cookies are delicious. And you can't stop at just one! Yum!
Wholemeal Choc Chip Cookie Recipe
125 grams of Softened Butter
110 grams {1/2 cup} Caster Sugar
90 grams {1/3 cup + 2 teaspoons, very firmly packed} Brown Sugar
1/2 teaspoon Vanilla Extract
1 large Egg
100 grams {2/3 cup} Wholemeal Self Raising Flour
150 grams {1 cup} Wholemeal Plain Flour
200 grams {about 1 round cup} Choc Chips
Line one to three baking trays with non-stick baking paper.
Using an electric mixer, beat butter, caster sugar, brown sugar, and vanilla together until pale and creamy. Add egg until well combined.
Stir the plain flour and self raising flour in a small bowl. Add the flour and choc chips to the butter mixture and combine.
Form heaped teaspoons of dough into balls and place balls about 6cm apart on a baking tray. If baking in batches, you can refrigerate the dough between batches to prevent it from becoming too soft.
Bake for about 13-15 mins, or until cookies are lightly golden but still very soft. {they will firm up on cooling}
NB: White flour can be substitute for wholemeal. And this recipe can be used as a basic cookie dough without the choc chips.
